Love it when that happens :) I get the same feeling when both of my peppermint shrimp come out at the same time.  All other times when I just see one it's always in the back of my mind "I wonder if they are both still going strong?" And then I see them both together again and they always surprise me by being larger then I remember.

its my experience that no more then 1 shrimp per 100 gallons. they just don't get enough substance unless your feeding them all the time by hand.

I've got 3 large ones in my tank, never came across a shrimp that wouldn't eat dry food/pellets

its not the food you have to worry about, cleaner shrimp eat anything put in the tank and surely wont starve to death.. the issue is the aggression towards each other once they mature, only male female pairs will be successful, anything 3rds will eventually be killed off with the possibility still of when your down to 2 the second will be killed off with time too.

Cleaner shrimp are hermaphroditic...

I've also read this, I've also come across more than a few tanks with 3 or more cleaners and all under 200 gallons.

only when the need arises, they live in male female pairs.
