I really didn't want to go down the complex mad scientist chemical mixing/testing/additive method. But it appears to achieve the end goal I desire, I need to

That's simple:
1. From any fish store 2 bottles: Ca and K
Also Magnesium is needed.
2. dose it as written on the bottle.
3. Check for Ca/KH/Mg level every 3-7 days until system become stable.

Yep, figure the easier the better and the premix gives you everything you require. No guess work and trace elements via water change
BRS 160 setup last two episodes all on dosing and easy explaination

I've only ever used B-IONIC. Easy, convenient. Plus they add some trace elements.
Yes I watched a video about that product as well so thoughts on its use and affordability?

I understand they're more expensive due to convenience of use but at this point and with my lack of experience I think the trade off of having a premixed formula more advantageous.

In the video on BRS I think week 31 of the 160 reef they are doing. The BRS two part is pretty straight forward. The B ionic plus is pre mixed and more expensive but also included all the trace elements. BRS you may want to dose them but really not needed if you do regular water changes.

When using any chemicals: rule number 1 - never mix them before using.
That means solution #1 and #2 should be added to the tank in a different time (it is stated on the bottle)
Brand of #1 and #2 does not really matter. All of them working in the same way. Just depends how desperately brand owner wants money.
Mg is save to add any time. Mg brand does not matter - it's cheap chemical element, the same for all brands.
Trace elements should follow to rule number 1 - do not mix them. That means they have to be added separately.
That's actually the difference for balling and calcium reactor:
-with Calcium reactor: trace elements are optional
-with balling: trace has to be added or frequent water change is required to add these elements
