Personally I'd only be doing 5-10% wc every week and remain consistent doing it.....
The filter floss is not going to help much in the long run.... That sort of mechanical filtration does not help against dissolved (testable) organics which result in the ammonia,nitrites, nitrates you are seeing..... Eventually po4 can become an issue also. If you are starting to S&D ee diatoms then the cycle has completed and now you are see what a saltwater aquarium can grow if provided with light, organic matter, po4, and silicates....
Keep up with the regular testing and add some more fish..... Get that skimmer tuned in and start running some carbon and GFO..... Look into some sort of bacteria fighting defense like pellets, carbon dosing, etc in order to achieve a ULNS....
